Asian Coleslaw Chicken Salad


Here’s Karen’s recipe that  I promised I’d post…enjoy this fiber filled recipe!!
This is a great quick lunch or dinner recipe that is healthy and tasty. You can serve it with grilled chicken on top or turn it into a vegetarian salad. I love to make this in the summer and if you don’t put the dressing on, it can last in the fridge all week without going bad. In case you weren’t aware, cabbage is high in fiber, vitamin C, potassium, and iron. It’s also low in calories so it’s ideal for anyone looking to lose weight. Fill up on cabbage this summer—you can even make it with a honey mustard, balsamic, or lemon dressing. Let us know what your favorite way to eat cabbage is!
Asian Coleslaw Chicken Salad
(serves 5)
1 pound chicken breast, thinly sliced
2.5 cups thinly sliced green cabbage
1 cup thinly sliced red cabbage
1 cup shredded napa cabbage
1 red bell pepper, thinly sliced
1 carrot, julienned
3 green onions, chopped
¼ cup chopped fresh cilantro

For the dressing:
3 tbsp rice vinegar
3 tbsp vegetable oil
2 tbsp creamy peanut butter
2 tbsp low sodium soy sauce
2 tbsp light brown sugar
1 tbsp minced fresh ginger root
½ tbsp minced garlic
Spray a pan with nonstick cooking spray. Grill the chicken 6-8 minutes on each side, remove from heat and set aside.  In a medium bowl, whisk together all the salad dressing ingredients. Set aside. In a large bowl, mix together all the salad ingredients.  Add in the chicken. Toss with the peanut butter dressing just before serving.

Carrot-Ginger Dressing

I recently purchased the Candle Cafe Cookbook.  If you live in New York City, you should definitely check out both of their restaurants, both on the Upper East Side.  It's a vegan restaurant but even if you are not on a vegan diet you can still enjoy great soups, salads, entrees, and even desserts!!  I particularly love their dressings, they have about 8 to choose from! Here's an adapted version of their Carrot-Ginger Dressing.

Carrot-Ginger Dressing
(makes 2 cups)
3 knobs of peeled ginger, about 1-inch each, minced
2 garlic gloves
2 shallots, peeled and roughly chopped
1 cup peeled and shredded carrots
1 teaspoon sesame oil
1/2 cup vegetable or safflower oil
1/4 cup apple cider vinegar
3 tablespoons agave nectar
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar

Place all ingredients in the food processor or a blender and process until smooth.  Taste to adjust seasoning.  Keep in the fridge, tightly covered, for up to 10 days.  Pour over your favorite mixed greens and enjoy!

Korean Chicken Meatballs

Korean Chicken Meatballs
(makes about 15 meatballs)

2 tablespoons brown sugar
2 teaspoons sesame oil
8 garlic cloves
3 scallions
1 tablespoon chopped ginger
1 cup cilantro
2 tablespoons low sodium soy sauce
1/4 teaspoon salt
1 pound skinless chicken breast, cut into chunks (or ground chicken)
1/2 cup panko or plain breadcrumbs

Preheat oven to 400 degrees.
In a food processor, combine  sugar, oil, garlic, scallions, ginger, cilantro, soy sauce, and salt.  Process until finely ground.  Add chicken, and process until finely ground.  Transfer mixture into a bowl and add the panko and mix to combine.  Divide mixture into 15 portions and shape each into a meatball.  Place balls on a greased cookie sheet.  Bake for 15-20 minutes.

BBQ...and more Quinoa

Another quinoa creation made by me, I call it non other than, Asian Style Quinoa. It contains edamame, cilantro, sauteed shitake mushrooms, slivered almonds, toasted sesame seeds, and 2 cups cooked quinoa.
Asian Style Quinoa Dressing
(This is enough to pour over 2 cups cooked quinoa)
1/4 cup rice wine vinegar
2 shallots finely chopped.
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons peanut butter or tahini
1/2 cup sesame oil
1/2 cup peanut or vegetable oil
1/4 cup soy sauce
Mix all ingredients together and pour over quinoa salad before serving.

Seth also made Mexican style corn smothered in sour cream and shredded cojita cheese sprinkled with lime, AKA Elote....who knew it would be so easy to make something so good! Let me tell you, it was f-cking amazing!!! I think I ate it up in 2.5 minutes! YUMMY!
